A pancake or griddle cake is a smooth, flat cake, often thin and round prep, cooked from a flour that may contain eggs, milk and baking powder and cooked in a heat using a non-stick frying pan, often frying with oil.

There are so many ways to make pancakes, but the better ones are healthy pancake which is good for your health.

This recipe for banana oat pancake is quick and healthy, and it’s a sound way to provide energy to our body in the dawn. Making healthy pancakes can be good for kids too, they love pancakes. You can also make pancakes and set in their lunchboxes.

For this recipe, I used banana, oat flour, eggs, unsweetened almond milk and cinnamon powder. This is a protein packed pancake and it’s a good breakfast food.

I am picky with my pancakes, so if you are looking at cutting down on sugar, then this is for you. The milk is almond unsweetened milk, gluten free, and dairy free. This pancake is soft just the style you will like it. It’s quick and easy.

• 1 medium ripe banana

• 2 teaspoons of coconut oil

• ½ cup of milk

• 2 eggs

• 1 cup oats

• 1/8 tsp cinnamon

• 1/8 tsp of baking soda

• 1/8 tsp baking powder

• 1/8 tsp sea salt



➢ Before you start, blend the oatmeal into flour, read on how to blend oatmeal into flour HOW TO MAKE OAT FLOUR

➢ Put the banana, the eggs, the oat flour, milk, cinnamon powder, baking powder, baking soda and the salt in a bowl and mash with a kitchen aid mixer or with a fork.

➢ Mix well until thoroughly combined.

➢ Heat a non-sticky pan skillet over medium heat with a bit of coconut oil.

➢ Pour the mix into the frying pan in a circle shape, cook on one position for approximately 1.5 minutes, then turn and cook on the other side for until golden brown on both positions.

➢ Eat alone or serve with Custard, Akamu or tea.
