You must have read my article on porridge potato/how to prepare porridge potato with oil bean (akpaka/ugba). Sometime last week I decided to make something quick, delicious and nourishing. Then I came up with this recipe, trust me you will like. It does not just look yummy, it tastes yummy.

This recipe is almost similar to the other recipe on porridge potato but with some twist, so read on. Here it is like double-dose of nutrients, the cucumber puts it to a whole new level. We need to understand how cucumber is beneficial to us.
These are a short list of why you should add cucumber to your diets: It will keep you hydrated, fights heat inside and out, flushes out toxins, nourishes you with vitamins, supplies skin-friendly minerals(magnesium, potassium, silicon), aids in weight loss, revives the eyes, cuts cancer risk, stabilizes blood pressure, refreshes the mouth, smooths hair and nails, soothes muscle and joint pain, keeps kidneys in shape, good for diabetics, reduces cholesterol.
Understand that you can utilize a similar method to prepare a porridge yam with cucumber. Feel free to make a twist. This recipe can be served for lunch or dinner, and don’t forget to add a glass of juice or smoothie.

• 5 medium Russet potatoes
• 2 teaspoons of crayfish
• 1 medium-sized onion
• Ginger powder
• 2 stock cubes
• One cooking spoon of palm oil
• Ground pepper
• Salt to taste
• one medium cucumber
❖ Peel the potatoes and cut into cubes, then wash into a cooking pot.
❖ Chop the onions and add to the pot.
❖ Add the ground pepper, the stock cubes, salt and the garlic powder and set on the heat.
❖ Chop the cucumber and set aside.
❖ Once the potatoes are soft, add the palm oil, add the crayfish and cook for 5mins.
❖ I usually like my porridge thick, and to get my desired thickness, I mash one or two of the cooked potato into the pot.
❖ At this time, add the chopped cucumber, stir and turn off the heat.
It’s ready, serve and enjoy!
