Where are my yam lovers? Get in here and learn a quick and healthy breakfast recipe. We grew up eating crunchy yam by deep frying it, hanging by the streets and roadside, waiting for them to sell some already fried yam to us.
Most people fry theirs at home, but the majority are customers to the roadside seller to satisfy their cravings.
Thus, many people are keeping away from deep frying due to its health significance, but the good news is that you can even enjoy your dried/crunchy yam without deep frying it as common. This choice is more dependable, quick and healthy. Trust me it is pleasantly crispy.
Oven baked yam can serve for a snack anytime and it’s a great food for anyone that enjoys bland food or in the bland food diet.
Seriously though, this recipe is a must try. It’s easy, simple and fun to make. Just a pinch of salt and you are good to go. You can likewise opt to go on no-salt oven baked yam and still enjoy an awesome taste. Note, if you are staying outside Africa, you can always buy your yam from an African store near you (this yam is totally different and specific to African).
For the vegetable egg sauce, I used just one egg. Feel free to use more if you want.

Cook: 40 minutes
Total: 50 minutes
• One stock cube
• Himalaya salt (to taste)
• Small onions
• Olive oil
• 2 stock cubes
• 3 bell peppers (green, yellow and red)
• 1 scotch bonnet
❖ Preheat the oven to 400 degrees.
❖ Peel your yam, slice as desired, wash thoroughly and place in a sieve to drain the water.
❖ Sprinkle some salt to taste, rub each slice of yam with some olive oil and place in a foil pan.
❖ At this point place it in the oven to bake.
❖ After 10minutes turn the yam to the other side to continue cooking. Remember: you can turn it as consistent as you want.
❖ Now, slice your onions, the bell peppers, and the scotch bonnet.
❖ Break the egg or eggs into a plate and stir.
❖ On a medium heat, place a saucepan on the stove, add some olive oil (I used just two spoons for mine). Add the onions and stir for a while, add the peppers and allow it to cook for a while.
❖ Don’t forget to check on the yam, once it is dried or crunchy to your taste, take it out.
❖ At this time add the stock cube, a little salt (if needed), add the egg/eggs and mix together. Then cook for 2minutes.
❖ It is done. Serve your oven baked yam with vegetable egg sauce.
