Pepper soup is one the meal I like twisting the recipe. Have you tried preparing your pepper soup with a staple together? Goatmeat with plantain pepper soup is one of the best meal I enjoyed during my vacation last year in Pennsylvania. This recipe is a must try and it is perfect for any weather especially winter season.

OFE AKPARATA (AKPARATA SOUP) WITH KALE

Akparata powder is a thickener. It is always added to most soup to improve its thickness and achieve desired consistency. It’s a native thickener with an awesome aroma and taste.

How to make Afang Soup with Spinach leaves

What most of us don’t know is that Akparata can be used as the main ingredient for a soup. Akparata powder is mostly used in the Eastern part of Nigeria, Enugu to be precise.

Note that you can use any vegetable of your choice to make Akparata soup but for this recipe I used kale.

This soup is a must try, as it will whet your taste buds giving you that everyday local taste you have always craved for.

HOW TO MAKE OGBONO SOUP WITH DRIED OKRA

Akparata powder can be bought from an open market in Nigeria or in African stores abroad.

Ingredients

  • Akparata powder (5 tsp)
  • Shaki and beef cheek
  • Stockfish
  • Dry fish
  • Crayfish (2 tsp)
  • Ground pepper (to taste)
  • Ground Uziza seed
  • Kale
  • Ground okpeye
  • Palm oil (3 tsp)
  • Medium onions(chopped)
  • Salt ( to taste)
  • 2 stock cubes

Procedure

  1. Wash the meat into a pot. Add salt, stock cubes, onions, and water. Place on a medium-high heat to cook until almost soft.

2. Wash the stockfish with warm water and set aside.

MUSHROOM OKRA SOUP WITH TOMATO PUREE

3 Debone and wash the dry fish, then set aside.

4 Put the Akparata powder into a bowl. Add the palm oil and mix thoroughly to dissolve all lumps.

5 Wash and slice the kale, then set aside.

6 Once the meat is almost done, add the stockfish and cook.

EGUSI SOUP AND BITTERLEAF

7 Now add the dry fish, add the ground okpeye, uziza, and pepper.

8 Add the mixed Akparata powder, add water to get a liquid consistency, stir thoroughly and cook for about 7minutes on a medium heat.

9 Add the vegetable and the crayfish.

10 Stir and turn off the heat.

11 It’s done and ready to be served.

server with  Oatmeal fufu  , pounded yam or Eba

MUSHROOM OKRA SOUP WITH TOMATO PUREE

So many times, we tend to make our foods similar way each time and it can be boring, tedious and exhausting. But know there are different ways you can prepare your cuisine and trust that it will come out well and still supplies the required benefits and more.

Okra soup is one soup I don’t get tired of eating and there are some many ways you can prepare your okra soup. A lot of time, I don’t always need a staple for it, just crunching on it. Read about the health benefits Okra soup

For this recipe, I used mushrooms and some tomato and pepper puree, and believe me it’s a must taste. My native ingredients (ground okpeye, ground uziza, and locus bean) are always a must in my soup, I can’t afford to miss that local taste. I also added some grilled lamb shank to make it richer and its soup is very delicious.

Ingredients

• 12 ounces of fresh okra

• 8ounces of Mushroom

• Fresh fish (Mackerel)

• Grilled lamb Shank

• Dry Fish

• Ground Uziza

• Ground Okpeye

• Locust bean

• Ground crayfish

• 4 medium fresh tomatoes

• 3 green chili peppers

• 3 tablespoons of Palm oil

• Ground pepper to taste(Optional)

• 1 Habenero pepper

• Himalayan salt (to taste)

• 2 stock cubes

• Onions

• Spinach

• 2 stock cubes

Non-Palm oil okra soup

Procedure

❖ Wash and slice your mushroom into small size and set aside

❖ Slice your fresh okra, spinach leaves and set aside.

❖ Wash and blend the tomatoes and pepper into puree and set aside

❖ Debone and wash the dry fish with hot water.

❖ Scatter the grilled lamb shank into small piece.

❖ Wash the fresh fish, place into a pot, add a stock cube, salt, and onions, then place on the heat and bring to boil. Bring down the pot, separate the fish and the stock in two different plates.

❖ Place a pot on the heat and add the palm oil, add the chopped onions and stir for a few seconds, add the tomato puree and continue stirring on medium heat for about 60seconds.

❖ Now add the fish stock, the mushrooms, the dry fish, scattered lamb shank, ground uziza, and ground okpeye, allow to cook for 6-7 minutes. Add some ground pepper for more hotness(spicy) and it’s totally optional.

❖ Add the sliced okra, the spinach leaves, crayfish, locust bean and some chopped onions, then turn together.

❖ Adjust the taste if required.

❖ Add back the fresh fish and turn off the heat.

❖ it’s ready.

Serve with Eba, wheat, semovita or Oatmeal fufu. How to make  OATMEAL FLOUR

In eastern Nigeria, specifically Enugu State, farmers, and gardeners usually have enough produce during harvest period. Most individuals farm for their household and some farm to sell to get along or earn a living. Now for household farmers, there are always excesses, but they look for a way to preserve and save the produce.

Okra can be preserved such as most produce, and it’s done by slicing the okra into round little shapes and spreading them under the sunlight for days till it gets dry.
