HOW TO MAKE FRIED RICE

So I just realized that I have not shared any of my fried rice recipe on the blog. It’s just me procrastinating a lot, honey🤣. But you got me now. I also want to believe you have been waiting for it. Anything to make you happy😍.

There are a lot of fried rice recipes but this one is simple and nothing but the best. I would want to say that this fried rice recipe is inspired by Nigeria or rather African fried rice recipe. A lot of countries have their own fried rice recipe but trust me irrespective of where you are from, this is a must try!!!

Fried rice is one of the meal that never goes off the party menu💃🏽(owanbe). But fried rice and jollof rice which is the senior? Please answer in the comment section.

Now to the business of the day. Cooking fried rice is not as complicated as you think.

INGREDIENTS

  • 3 cups of basmati rice
  • Chicken broth
  • 3 medium carrots
  • 1 big onion
  • Spring onions
  • Green beans
  • 1 bell pepper
  • 1 green pepper
  • 2 scotch bonnet
  • 5 tablespoons of olive oil
  • 2 stock cube
  • Curry powder
  • 2 tablespoons of crayfish
  • Thyme
  • Salt (to taste)

 

PROCEDURES

  • Lightly parboil the rice, wash and set aside. Note: Be careful when using basmati rice, it can easily get smushy if you don’t know how to cook it.
  • Wash and chop all the vegetables and onions. Then set aside.

  • Blend the scotch bonnet. Set aside.
  • Sieve the chicken broth into a pot. Add enough curry powder, thyme, salt, crayfish, blended scotch bonnet and bring to a boil. Now add the rice, add more water if required. The water should be at the same level as the rice. Mix together and adjust the taste if required. Then cook on a medium heat.
  • Once the water is dried up, put aside.

  • In a saucepan, add the olive oil, once the oil is hot, add the onions, stir and add the spring onions. Now add other vegetables and saute for 1 minute. Add the stock cube or salt if you like.

  • Now depending on the size of your pan and the quantity of rice, divide the vegetables and bring it out in a separate plate. Gradually mix the rice and the vegetables together.

  • Your fried rice is ready!!!! Serve and enjoy

JOLLOF SPAGHETTI AND BEANS

Hello everyone! Welcome to today’s blog post.

Today I will be sharing with you how I make my Jollof Spaghetti with beans. This an amazing recipe and it is easy to prepare. Spaghetti is one of the simple meal you can prepare and adding a twist to it takes it to a whole new level.

You can never go wrong with this recipe.

For this recipe, I added some chopped broccoli and chopped bell peppers. I used Kidney beans and for some reason, I like to rinse the kidney beans and cook it separately for a while.

This is a healthy recipe. There are tons of health benefits of beans and this combo provides you with the daily nutrients and energy.

INGREDIENTS

  • Spaghetti (300g)
  • Kidney beans (250ml)
  • 11/2 Red bell pepper
  • 1/2 green pepper
  • Some fresh tomatoes
  • Tin tomatoes (100ml)
  • 1 big onion
  • 2 scotch bonnet
  • 3 tablespoons of olive oil
  • 2 stock cubes
  • Curry powder
  • Salt (to taste)
  • Seasoning flavor
  • Broccoli

PROCEDURES

  • Put the spaghetti into a boiling water and cook until tender. Then, wash and pour into a sieve and set aside.
  • Rinse the kidney beans and cook for a while. Pour into a sieve after cooking and set aside.
  • Now wash and chop the broccoli, half of the onions and some of the bell peppers. Then set aside.
  • Blend the fresh tomatoes, the rest of the bell peppers, onions and scotch bonnet. Pour into a pot and start cooking to dry up the excess water.
  • Now add the tomato paste and cook for 2 minutes in a low heat. Whilst it’s still cooking, you can start adding the chopped onions, stock cube, curry and seasoning flavor.
  • Add the olive oil, stir and allow to simmer. Add the beans, chopped broccoli and peppers and mix together.
  • It’s time to add the spaghetti and properly mix together with a kitchen tong or spatula.
  • Allow on a lower heat for about 1-2minutes.
  • Adjust the taste if required.

It’s ready. Serve with cold juice.

COCONUT RICE RECIPE

Coconut rice is one of my favorite ways to prepare my rice. It’s a yummy lunch idea made with coconut milk and you can get coconut milk from any grocery store. If you desire to use whole fresh coconut, note that you can chop and blend to get the milk out of it. All you need to do is to place it on a sieve to strain out the milk.
