MUSHROOM OKRA SOUP WITH TOMATO PUREE

So many times, we tend to make our foods similar way each time and it can be boring, tedious and exhausting. But know there are different ways you can prepare your cuisine and trust that it will come out well and still supplies the required benefits and more.

Okra soup is one soup I don’t get tired of eating and there are some many ways you can prepare your okra soup. A lot of time, I don’t always need a staple for it, just crunching on it. Read about the health benefits Okra soup

For this recipe, I used mushrooms and some tomato and pepper puree, and believe me it’s a must taste. My native ingredients (ground okpeye, ground uziza, and locus bean) are always a must in my soup, I can’t afford to miss that local taste. I also added some grilled lamb shank to make it richer and its soup is very delicious.

Cook Time: 15minutes

Total Time: 30 minutes

Ingredients

• 12 ounces of fresh okra

• 8ounces of Mushroom

• Fresh fish (Mackerel)

• Grilled lamb Shank

• Dry Fish

• Ground Uziza

• Ground Okpeye

• Locust bean

• Ground crayfish

• 4 medium fresh tomatoes

• 3 green chili peppers

• 3 tablespoons of Palm oil

• Ground pepper to taste(Optional)

• 1 Habenero pepper

• Himalayan salt (to taste)

• 2 stock cubes

• Onions

• Spinach

• 2 stock cubes

Non-Palm oil okra soup

Procedure

❖ Wash and slice your mushroom into small size and set aside

❖ Slice your fresh okra, spinach leaves and set aside.

❖ Wash and blend the tomatoes and pepper into puree and set aside

❖ Debone and wash the dry fish with hot water.

❖ Scatter the grilled lamb shank into small piece.

❖ Wash the fresh fish, place into a pot, add a stock cube, salt, and onions, then place on the heat and bring to boil. Bring down the pot, separate the fish and the stock in two different plates.

❖ Place a pot on the heat and add the palm oil, add the chopped onions and stir for a few seconds, add the tomato puree and continue stirring on medium heat for about 60seconds.

❖ Now add the fish stock, the mushrooms, the dry fish, scattered lamb shank, ground uziza, and ground okpeye, allow to cook for 6-7 minutes. Add some ground pepper for more hotness(spicy) and it’s totally optional.

❖ Add the sliced okra, the spinach leaves, crayfish, locust bean and some chopped onions, then turn together.

❖ Adjust the taste if required.

❖ Add back the fresh fish and turn off the heat.

❖ it’s ready.

Serve with Eba, wheat, semovita or Oatmeal fufu. How to make  OATMEAL FLOUR
